Nanny Plum Cake
My latest project involved making a recipe using Sunsweet Amaz!n Prune Juice and I immediately thought of a prune bundt cake. I’ve never made a cake like this before, but I am thrilled with the results! Also, the entire house smelled like gingerbread while it was baking.
Plum Bundt Cake
Cake Ingredients
1/2 cup shortening
1 cup sugar
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
3/4 tsp salt
1/4 tsp ground allspice
1/4 tsp ground cloves
1/4 tsp nutmeg
1 cup Sunsweet Amaz!n prune juice
1 cup chopped pitted dried Sunsweet prunes
1/2 cup chopped candied ginger
zest of one orange
1/2 cup chopped pistachios
Glaze Ingredients
Juice of two oranges
2 cups confectioner’s sugar
Directions
In a large bowl, use mixer to cream shortening and sugar until combined and fluffy. Add eggs, one at a time, beating well after each addition. In a separate bowl- combine the dry ingredients. Add dry mix to creamed mixture alternately with prune juice, beating well after each addition. Stir in prunes and candied ginger.
Pour into a greased 10-in. bundt pan. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in pan. Remove from pan and cool completely on wire rack.
Mix orange juice and confectioner’s sugar to make glaze. Pour evenly over cake. Sprinkle with orange zest and chopped pistachios.
